Ingredients

  • 2.5 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1 cup Unsalted butter (softened)
  • 2 cups Granulated sugar
  • 4 large Eggs
  • 2 teaspoons Pure vanilla extract
  • 1 cup Whole milk
  • 2 cups Heavy whipping cream
  • 1 cup Powdered sugar
  • 1.5 cups Fresh strawberries (diced)
  • 3 tablespoons Strawberry jam

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and set aside.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, beat the softened butter and granulated sugar together with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.

Step 4

Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

Step 5

Gradually add the dry ingredients to the wet mixture in three parts, alternating with the milk. Begin and end with the dry ingredients, mixing just until combined after each addition.

Step 6

Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula and tap the pans gently on the counter to release air bubbles.

Step 7

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Step 8

Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.

Step 9

While the cakes cool, prepare the strawberry cream frosting. In a medium bowl, whip the heavy whipping cream with an electric mixer on high speed until soft peaks form.

Step 10

Slowly add the powdered sugar and continue whipping until stiff peaks form.

Step 11

Gently fold in the diced strawberries and strawberry jam until evenly incorporated.

Step 12

Once the cakes have completely cooled, place one cake layer on a serving plate. Spread a generous amount of strawberry cream frosting on top.

Step 13

Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.

Step 14

Garnish with fresh strawberries if desired. Refrigerate for at least 30 minutes before serving to allow the frosting to set.

Step 15

Slice and enjoy your homemade vanilla cake with strawberry cream frosting!
