  • 2 large Fresh poblano peppers
  • 1 cup (loosely packed) Fresh cilantro
  • 1 large Fresh jalapeño peppers
  • 3 large Garlic cloves
  • 2 tablespoons Fresh lime juice
  • 2 tablespoons Extra virgin olive oil
  • 1 teaspoon Kosher salt
  • 1 teaspoon Ground cumin
  • 1 teaspoon Honey (optional)
  • 2 tablespoons Water

Directions

Step 1

Prep the tomatillos by peeling away the husks and rinsing them under warm water to remove the sticky residue. Pat them dry.

Step 2

Place the tomatillos on a baking sheet along with the poblano peppers, jalapeño, and unpeeled garlic cloves. Broil on high for 6-8 minutes, flipping everything over halfway through, until charred and softened.

Step 3

Remove the baking sheet from the oven. Let the vegetables cool slightly. Peel the garlic cloves and discard their skins. For the peppers, remove the stems and seeds (or leave the seeds if you prefer more heat).

In a blender or food processor, combine the charred tomatillos, poblano peppers, jalapeño, garlic, cilantro, lime juice, olive oil, kosher salt, cumin, honey (if using), and water.
