Ingredients

  • 1.5 cups All-purpose flour
  • 2 tablespoons Unsweetened cocoa powder
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Baking powder
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 1.25 cups Buttermilk
  • 1 Egg
  • 3 tablespoons Unsalted butter (melted)
  • 1 teaspoon Red food coloring
  • 1 teaspoon Vanilla extract
  • 4 ounces Cream cheese (softened)
  • 0.75 cups Powdered sugar
  • 2 tablespoons Milk
  • 1 Heart-shaped cookie cutter

Directions

Step 1

In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

Step 2

In a separate bowl, combine the buttermilk, egg, melted butter, red food coloring, and vanilla extract. Whisk until smooth.

Step 3

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Step 4

Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

Step 5

Scoop 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges start to set, about 2-3 minutes.

Step 6

Flip the pancakes and cook for an additional 1-2 minutes, or until cooked through. Transfer to a plate and keep warm while cooking the rest of the batter.

Step 7

Once all the pancakes are cooked, use the heart-shaped cookie cutter to cut out heart shapes from each pancake. Set aside the heart-shaped pancakes.

Step 8

To make the cream cheese glaze, beat the softened cream cheese in a medium bowl until smooth. Add the powdered sugar and milk and mix until it reaches a drizzle-able consistency. Add more milk if needed.

Step 9

Drizzle the cream cheese glaze over the heart-shaped pancakes and serve immediately. Optionally, garnish with fresh strawberries or sprinkles for extra Valentine’s Day flair.
