Ingredients

  • 3 medium Potatoes
  • 3 pieces Green chilies
  • 4 pieces Garlic cloves
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Mustard seeds
  • 8 leaves Curry leaves
  • 0.25 teaspoon Asafoetida (hing)
  • 2 tablespoons Coriander leaves
  • 1 cup Gram flour (besan)
  • 0.75 cup Water
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Cumin seeds
  • 0.5 teaspoon Red chili powder
  • 2 cups Oil
  • 6 pieces Pav buns
  • 2 tablespoons Butter
  • 0.5 cup Green chutney
  • 0.5 cup Red garlic chutney

Directions

Step 1

Boil the potatoes until tender. Once done, peel and mash them.

Step 2

In a blender, add green chilies and garlic. Blend to a coarse paste.

Step 3

Heat 2 tablespoons of oil in a pan. Add mustard seeds, cumin seeds and let them splutter.

Step 4

Add the blended chili-garlic paste, curry leaves, and asafoetida. Sauté for 2 minutes.

Step 5

Add turmeric powder, mashed potatoes, 1 teaspoon of salt, and coriander leaves. Mix well.

Step 6

Cook the mixture for 5 minutes and then let it cool down. Shape the potato mixture into 6 golf-sized balls.

Step 7

In a mixing bowl, combine gram flour, 0.5 teaspoon salt, red chili powder, and water to make a smooth batter.

Step 8

Heat the remaining oil in a deep pan over medium heat.

Dip each potato ball into the gram flour batter, ensuring it is completely coated.

Carefully deep-fry each coated potato ball until golden brown. Remove and drain on a paper towel.

Slice each pav bun into half and spread butter on the inner sides.

Toast the buttered pav buns on a hot pan until lightly crisp.

Spread green chutney on one side of the bun, and red garlic chutney on the other.

Step 14

Place the fried potato ball between the two halves of the bun.

Serve hot vadapav with extra chutneys and fried green chilies, if desired.
