  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped
  • 2 teaspoons fresh lemon juice

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the diced onion, chopped carrots, and celery. Sauté for 5 minutes, stirring occasionally, until the vegetables start to soften.
