Ingredients

  • 2 pounds Beef stew meat
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 3 medium Carrots, peeled and sliced
  • 3 stalks Celery stalks, diced
  • 3 medium Russet potatoes, peeled and cubed
  • 3 cloves Garlic cloves, minced
  • 4 cups V8 vegetable juice
  • 2 cups Beef broth
  • 2 tablespoons Tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Frozen peas
  • 2 tablespoons Fresh parsley, chopped (optional garnish)

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

Step 2

Season the beef stew meat with salt and black pepper. Add the beef to the pot in batches, searing on all sides until browned, about 4-5 minutes per batch. Remove the beef and set aside.

Step 3

In the same pot, add the diced onion, carrots, and celery. Sauté for 4-5 minutes until the vegetables begin to soften.

Stir in the minced garlic and cook for an additional 1 minute until fragrant.
