Ingredients

  • 56 oz Canned baked beans
  • 8 slices Thick-cut bacon
  • 1 medium, diced Yellow onion
  • 1 medium, diced Green bell pepper
  • 3 minced Garlic cloves
  • 1/3 cup Dark brown sugar
  • 1/2 cup Ketchup
  • 2 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Apple cider vinegar
  • 1 tsp Smoked paprika
  • 1/2 tsp Ground black pepper
  • 1 tsp Hot sauce (optional)

Directions

Step 1

In a large skillet over medium heat, cook the bacon slices until crispy. Remove the bacon from the skillet, place them on a paper towel-lined plate to drain, and set aside. Once cooled, crumble the bacon into small pieces.

Step 2

Using the same skillet with the bacon drippings, sauté the diced yellow onion and green bell pepper over medium heat for 5-7 minutes, or until softened and fragrant. Add the minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.

Step 3

In a large slow cooker, combine the canned baked beans, cooked onion and pepper mixture, crumbled bacon, dark brown sugar, ketchup, Dijon mustard, Worcestershire sauce, apple cider vinegar, smoked paprika, ground black pepper, and hot sauce (if using). Mix thoroughly to ensure all the ingredients are well combined.

Step 4

Set the slow cooker to low heat and cook for 6 hours. Stir occasionally to prevent sticking and to distribute flavors evenly.

Step 5

After 6 hours, taste the beans and adjust seasoning if necessary. Serve warm as a side dish for barbecues, grilled meats, or picnics.
