Ingredients

  • 1 pound ground beef
  • 0.5 cup breadcrumbs
  • 0.25 cup parmesan cheese
  • 1 large egg
  • 2 cloves garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium onion
  • 2 medium carrots
  • 2 celery stalks
  • 8 cups chicken broth
  • 1 14-ounce can diced tomatoes
  • 1 teaspoon dried Italian seasoning
  • 1 cup dried pasta (small shapes like ditalini or orzo)
  • 2 tablespoons fresh parsley

Directions

Step 1

In a large mixing bowl, combine ground beef, breadcrumbs, parmesan cheese, egg, minced garlic, salt, and black pepper. Mix until just combined. Avoid overmixing to keep the meatballs tender.

Step 2

Roll the mixture into small meatballs, about 1 inch in diameter. Place them on a plate or tray while you finish shaping them.

Step 3

Heat the olive oil in a large soup pot over medium-high heat. Add the meatballs in batches, browning them on all sides (about 2-3 minutes per side). Remove the browned meatballs to a plate and set aside. They do not need to be cooked through yet.

Step 4

In the same pot, add diced onion, peeled and chopped carrots, and sliced celery. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.

Step 5

Pour in the chicken broth and diced tomatoes (with their juice). Add the dried Italian seasoning and bring the soup to a boil.

Step 6

Reduce the heat to a gentle simmer and carefully add the meatballs back into the pot. Let the soup simmer for 20 minutes, allowing the flavors to develop and the meatballs to fully cook through.

Step 7

Stir in the dried pasta and cook until the pasta is tender, about 8-10 minutes, depending on the type of pasta used.

Step 8

Taste the soup and adjust the seasoning with more salt and pepper, if needed.

Step 9

Ladle the soup into bowls and garnish with freshly chopped parsley. Serve warm and enjoy!
