Ingredients

  • 4 medium sweet potatoes
  • 6 rings pineapple slices
  • 0.5 cup brown sugar
  • 4 tablespoons unsalted butter
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 0.25 cup pecans or walnuts (optional)
  • 2 tablespoons honey
  • 1 as needed cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9-inch round baking dish or skillet with cooking spray and set aside.

Step 2

Peel and slice the sweet potatoes into 1/4-inch thick rounds. Set them aside while preparing the caramel base.

Step 3

In a small saucepan, melt the butter over medium heat. Stir in the brown sugar, cinnamon, nutmeg, and salt until combined. Remove from heat and pour the mixture into the bottom of the prepared baking dish.

Step 4

Arrange the pineapple rings evenly over the brown sugar mixture. If using, scatter pecans or walnuts into the spaces between and around the pineapple rings.

Step 5

Layer the sweet potato slices on top of the pineapple rings, slightly overlapping them in a circular pattern. Make sure to cover the entire surface.

Step 6

Lightly drizzle honey over the sweet potato slices for additional sweetness.

Step 7

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

Step 8

Remove the foil and bake for an additional 10 minutes, or until the sweet potatoes are tender and slightly golden on top.

Step 9

Let the dish cool for 5 minutes. Carefully invert the baking dish onto a serving platter to reveal the caramelized pineapple and nut topping.

Step 10

Serve warm as a side dish or a sweet treat. Enjoy!
