  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 2 Eggs (large, room temperature)
  • 0.5 cup Unsweetened applesauce
  • 0.25 cup Almond milk (unsweetened, or other non-dairy milk)
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Fresh ginger (grated)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line the bottom of a 9-inch round cake pan with parchment paper. Lightly grease the sides with coconut oil.

Step 2

In a small bowl, toss the sliced apples with the coconut sugar, 1 teaspoon ground cinnamon, 1 teaspoon ground ginger, and 2 tablespoons of melted coconut oil. Arrange the spiced apple slices in an even layer on the bottom of the prepared pan.
