Ingredients

  • 400 grams Canned chickpeas (drained and rinsed)
  • 4 Eggs
  • 150 grams Sugar
  • 120 grams Unsalted butter (melted and slightly cooled)
  • 60 milliliters Lime juice (from fresh limes)
  • 2 teaspoons Lime zest (from fresh limes)
  • 1 teaspoon Vanilla extract
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 2 tablespoons Powdered sugar (for garnish)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 9-inch (23cm) round cake pan and line the bottom with parchment paper.

Step 2

In a food processor or blender, add the drained and rinsed chickpeas. Blend until completely smooth, scraping down the sides as needed.

Step 3

In a medium bowl, whisk together the eggs and sugar until pale and frothy. Add the melted butter, lime juice, lime zest, and vanilla extract, and mix until combined.

Step 4

Sift in the baking powder and salt. Stir the dry ingredients into the egg mixture until just incorporated.

Step 5

Fold the chickpea puree into the batter, ensuring it is fully incorporated and smooth.

Step 6

Pour the batter into the prepared cake pan and spread it evenly with a spatula.

Step 7

Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 9

Once cooled, dust the top of the cake with powdered sugar for garnish. Serve with extra lime zest or whipped cream, if desired.
