Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 large yellow onion, diced
  • 1 large green bell pepper, diced
  • 1 large red bell pepper, diced
  • 3 cloves garlic cloves, minced
  • 2 cups cooked white rice
  • 1 14.5-ounce can diced tomatoes (with liquid)
  • 1 8-ounce can tomato sauce
  • 1 cup beef broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup shredded cheddar cheese
  • 2 tablespoons parsley (for garnish, optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat the olive oil over medium heat.

Step 3

Add the ground beef and cook until browned, breaking it up into small pieces with a wooden spoon, about 5-6 minutes. Drain excess grease, if necessary.

Step 4

Add the diced onion, green bell pepper, red bell pepper, and minced garlic to the skillet. Cook, stirring occasionally, until the vegetables are softened, about 4-5 minutes.

Step 5

Stir in the cooked rice, diced tomatoes (with their liquid), tomato sauce, and beef broth. Mix well to combine.

Step 6

Season the mixture with Italian seasoning, paprika, salt, and black pepper. Stir until evenly distributed.

Step 7

Transfer the mixture into a 9x13-inch casserole dish and spread it out evenly.

Step 8

Sprinkle the shredded mozzarella and cheddar cheeses evenly over the top of the casserole.

Step 9

Cover the casserole dish with aluminum foil and bake in the preheated oven for 20 minutes.

Step 10

Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Step 11

Carefully remove the casserole from the oven and let it rest for 5 minutes before serving.

Step 12

Garnish with chopped parsley, if desired, and enjoy!
