Ingredients

  • 1 cup shiitake mushrooms (dried)
  • 0.25 cup soy sauce
  • 3 tablespoons miso paste (white)
  • 0.5 cup parmesan cheese (grated)
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 3 each garlic cloves (minced)
  • 2 each anchovy fillets (optional, for added depth)
  • 1 cup water
  • 0 salt (to taste)
  • 0 black pepper (freshly cracked, to taste)
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

Place the dried shiitake mushrooms in a heatproof bowl and pour 1 cup of boiling water over them. Let them rehydrate for 10 minutes. Once softened, finely chop the mushrooms and reserve the soaking liquid.

Step 2

In a large skillet over medium heat, warm the olive oil. Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned.

Step 3

If using anchovy fillets, add them to the skillet, breaking them up with a wooden spoon until they dissolve into the oil.

Step 4

Stir in the tomato paste and sauté for 1 minute to caramelize slightly. This will deepen the umami flavor.

Step 5

Add the chopped shiitake mushrooms to the skillet, along with the reserved soaking liquid. Stir to combine.

Step 6

Lower the heat and mix in the soy sauce, miso paste, and a pinch of salt if needed. Stir well until the miso dissolves into the liquid.

Step 7

Gradually stir in the grated Parmesan cheese, allowing it to melt and thicken the sauce.

Step 8

Simmer the mixture for 10-12 minutes over low heat, stirring occasionally, until the sauce thickens and develops a rich, savory flavor.

Step 9

Taste and adjust the seasoning with freshly cracked black pepper and additional salt if necessary.

Step 10

Serve warm as a topping for pasta, rice, or roasted vegetables. Garnish with fresh parsley for brightness.
