Ingredients

  • 4 lbs Chuck roast (boneless)
  • 2 tsp Salt
  • 1 tsp Black pepper (freshly ground)
  • 2 tbsp Olive oil
  • 1 Yellow onion (large, sliced)
  • 4 Garlic cloves (minced)
  • 4 Carrots (peeled and chopped into 2-inch pieces)
  • 6 Red potatoes (cut into quarters)
  • 2 cups Beef broth
  • 2 tbsp Worcestershire sauce
  • 2 tbsp Tomato paste
  • 1 tsp Dried thyme
  • 1 tsp Dried rosemary
  • 1 Bay leaf

Directions

Step 1

Season the chuck roast on all sides with salt and black pepper.

Step 2

Heat olive oil in a large skillet over medium-high heat. Once hot, sear the roast for 2-3 minutes on each side until browned. Remove the roast and set it aside.

In the same skillet, add the sliced onion and minced garlic. Sauté for 2-3 minutes until fragrant and slightly softened.

In a slow cooker, layer the carrots and red potatoes on the bottom. Place the seared roast on top of the vegetables.
