Ingredients

  • 4 pieces Large flour tortillas
  • 1.5 cups Shredded cheddar cheese
  • 1.5 cups Shredded Monterey Jack cheese
  • 1 cup Cooked chicken breast, shredded or diced
  • 1 large Red bell pepper, diced
  • 1 piece Small onion, diced
  • 2 tablespoons Cilantro, chopped
  • 0.5 teaspoons Ground cumin
  • 0.5 teaspoons Chili powder
  • 1 tablespoon Olive oil
  • 2 tablespoons Butter
  • 0.5 cup Salsa (optional, for serving)
  • 0.5 cup Guacamole (optional, for serving)
  • 0.5 cup Sour cream (optional, for serving)

Directions

Step 1

In a medium skillet over medium heat, warm the olive oil.

Step 2

Add the diced onion and red bell pepper to the skillet. Sauté for 3-4 minutes or until they are softened.

Step 3

Add the shredded or diced chicken to the skillet along with the ground cumin and chili powder. Stir everything together and cook for an additional 2-3 minutes to combine the flavors. Remove from heat and set aside.

Step 4

Lay a large flour tortilla flat on a clean surface. Sprinkle 1/4 of the cheddar cheese and Monterey Jack cheese on half of the tortilla.

Step 5

Spread 1/4 of the chicken and vegetable mixture evenly over the cheese layer. Add a sprinkle of chopped cilantro, if desired. Fold the tortilla in half over the filling.

Step 6

Heat a large skillet or griddle over medium heat and melt 1/2 tablespoon of butter. Place the folded tortilla in the skillet.

Cook the quesadilla for 2-3 minutes on each side or until the tortilla is golden brown and crispy and the cheese is fully melted.

Remove the quesadilla from the skillet and place it on a cutting board. Repeat with the remaining tortillas, cheese, and filling, adding more butter to the skillet as needed.

Cut each quesadilla into triangles and serve immediately with salsa, guacamole, and sour cream on the side, if desired.
