Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil and set aside.
Cook manicotti shells in a large pot of salted boiling water for 6-7 minutes, or until al dente. Drain and rinse with cold water to stop the cooking process. Set aside.
Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute. Add fresh spinach and cook until wilted, about 3-4 minutes. Remove from heat and allow to cool slightly.
In a large mixing bowl, combine crab meat, cooked spinach (squeezed of excess water), ricotta cheese, 1/2 cup mozzarella, 1/2 cup Parmesan cheese, egg, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Mix well.

Pour the Parmesan cheese sauce evenly over the stuffed manicotti shells in the baking dish. Sprinkle the remaining 1/2 cup mozzarella cheese on top.
Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly.
