Ingredients

  • 200 grams Unsalted butter
  • 100 grams Granulated sugar
  • 50 grams Brown sugar
  • 2 teaspoons Vanilla extract
  • 1 large Egg
  • 280 grams All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 200 grams Semi-sweet chocolate chips
  • 1 teaspoon Coconut oil (optional)

Directions

Step 1

Preheat oven to 180°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy using a hand or stand mixer.

Step 3

Add the vanilla extract and egg, beating until fully incorporated.

Step 4

In a separate mixing bowl, combine the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms.

Scoop out tablespoon-sized portions of dough and roll into balls. Place them on the prepared baking sheets, leaving about 2 inches between each cookie.

Flatten each ball slightly with the palm of your hand or the back of a spoon.
