Ingredients

  • 1 4-5 lbs Whole chicken
  • 2 tbsp Olive oil
  • 1 tbsp Salt
  • 1 tsp Black pepper
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1 tsp Dried thyme
  • 0.5 tsp Cayenne pepper (optional)
  • 1 can Beer (12 oz can)
  • 1 sprig Fresh rosemary or thyme sprig (optional, for beer can)

Directions

Step 1

Preheat your grill to medium-high heat (about 375°F/190°C) or your oven to 375°F (190°C).

Step 2

Remove the giblets from the chicken cavity and pat the chicken dry with paper towels.

Step 3

In a small bowl, mix together the salt, black pepper, garlic powder, paprika, dried thyme, and cayenne pepper (if using).

Step 4

Rub the chicken all over with olive oil, then evenly season the chicken inside and out with the spice mixture.

Step 5

Open the beer can and pour out (or drink) about half of the liquid. Optionally, add a sprig of fresh rosemary or thyme into the can for extra flavor.

Step 6

Carefully place the chicken upright over the beer can, inserting the can into the cavity of the chicken. Balance the chicken so it sits upright, using the legs and the can for support.

Step 7

Place the chicken on the grill or in a roasting pan in the oven. Close the lid if using a grill.

Step 8

Cook the chicken for about 1.5 hours, or until the internal temperature of the thickest part of the thigh reaches 165°F (74°C), and the skin is golden brown and crispy.

Step 9

Carefully remove the chicken from the grill or oven and let it rest for 10-15 minutes before removing the can and carving.

Step 10

Serve the chicken warm, slicing into portions and enjoy with your favorite sides.
