Ingredients

  • 4 medium beets
  • 3 medium potatoes
  • 2 medium carrots
  • 1 large onion
  • 0.5 head cabbage
  • 3 cloves garlic cloves
  • 2 tablespoons vegetable oil
  • 3 tablespoons tomato paste
  • 8 cups water or vegetable broth
  • 2 leaves bay leaves
  • 0.25 cup dill
  • 2 teaspoons salt
  • 0.5 teaspoons ground black pepper
  • 0.5 cup sour cream (for serving)
  • 1 loaf bread (optional, for serving)

Directions

Step 1

Peel and grate the beets, carrots, and potatoes. Finely dice the onion and shred the cabbage.

Step 2

Heat the vegetable oil in a large pot over medium heat. Add the onion and sauté for 3-4 minutes until translucent.

Step 3

Add the grated beets and carrots to the pot. Stir and cook for another 5 minutes.

Step 4

Push the vegetables to one side of the pot and add the tomato paste to the center. Let it caramelize for 1-2 minutes before mixing with the vegetables.
