Warm the milk (240 ml) in a small saucepan or microwave until it reaches about 37–40°C (just lukewarm). Pour half the milk into a large mixing bowl and sprinkle the yeast (7 g) over it. Add 1 tablespoon of the granulated sugar (from the 50 g) to help activate the yeast. Let this sit for 5–10 minutes until it becomes foamy.
Melt the unsalted butter (80 g) in a saucepan or microwave, then let it cool slightly.
In the mixing bowl with the activated yeast, add the remaining milk, the rest of the granulated sugar (about 40 g), melted butter, 1 egg, vanilla extract (5 ml), and salt (5 g). Stir until everything is well combined.
Gradually add the all-purpose flour (500 g) to the wet mixture, about 1 cup (125 g) at a time. Mix with a wooden spoon or your hands until a soft dough forms.
Transfer the dough to a lightly floured surface and knead by hand for about 8–10 minutes, or until the dough is smooth and elastic. You can also use a stand mixer with a dough hook for about 5–6 minutes.
Lightly grease a bowl with vegetable oil (10 ml) and place the dough inside, turning it to coat it in oil. Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rise in a warm, draft-free place for 1.5 hours, or until it has doubled in size.
Once the dough has risen, punch it down gently to release air. Divide it into 12 equal portions and shape each portion into a smooth ball by pulling the edges underneath. Place the rolls on a baking sheet lined with parchment paper, spacing them about 2 cm apart.
Cover the rolls loosely with a kitchen towel and let them rise again for about 30–40 minutes until doubled in size.
Preheat your oven to 180°C (350°F). In a small bowl, lightly whisk the remaining egg with 1 tablespoon of water to create an egg wash. Brush the tops of the rolls with milk (15 ml) or the egg wash for a golden finish.
Bake the rolls in the preheated oven for 18–20 minutes, or until they are golden brown and cooked through.
Remove the bulochky from the oven and let them cool slightly on a wire rack. Optionally, dust them with powdered sugar (10 g) before serving for added sweetness.
