Ingredients

  • 3 cups All-purpose flour
  • 1 teaspoon Salt
  • 1 large Egg
  • 1 cup Water
  • 3 tablespoons Butter
  • 1 small head (about 2 pounds) White cabbage
  • 2 tablespoons Brown sugar
  • 1 medium Onion
  • 2 tablespoons Vegetable oil
  • 0.5 cup Sour cream (optional, for serving)
  • 2 tablespoons, chopped Fresh dill (optional, for garnish)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center, then add the egg and mix lightly.

Gradually pour in the water while stirring, bringing the dough together. Knead the dough on a lightly floured surface for about 8–10 minutes until smooth and elastic.

Cover the dough with a kitchen towel and let it rest for 30 minutes.

While the dough rests, prepare the filling. Finely shred the cabbage and dice the onion.

Heat a large skillet over medium heat and add the butter and vegetable oil. Once melted, add the onion and sauté until golden, about 5 minutes.

Stir in the shredded cabbage and cook for 10–15 minutes, stirring occasionally, until softened and lightly caramelized.

Place a teaspoon of the cabbage filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape. Pinch the edges tightly to seal.

Repeat the process with the remaining dough and filling, covering the formed varenyky with a towel to prevent drying out.

Bring a large pot of salted water to a boil. Add the varenyky in batches and cook for about 3–5 minutes, or until they float to the surface.

Remove the cooked varenyky with a slotted spoon and transfer to a platter. Drizzle with melted butter to prevent sticking.

Step 14

Serve warm with optional sour cream on the side and garnish with fresh dill, if desired.
