Ingredients

  • 12 ounces Egg noodles
  • 8 cups Fresh spinach
  • 4 tablespoons Butter
  • 1 medium (finely chopped) Yellow onion
  • 2 cloves (minced) Garlic
  • 2 tablespoons All-purpose flour
  • 2 cups Whole milk
  • 1 cup Sour cream
  • 1 cup (shredded) Mozzarella cheese
  • 0.5 cup (grated) Parmesan cheese
  • 0.5 teaspoons Paprika
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cup Breadcrumbs
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or non-stick spray.

Step 2

Cook the egg noodles according to the package instructions until al dente. Drain and set aside.

Step 3

In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute.

Step 4

Sprinkle the flour into the skillet and stir well to combine. Cook the flour for 1-2 minutes to remove the raw flour taste.

Step 5

Gradually whisk in the milk, making sure to avoid lumps. Bring the mixture to a simmer, stirring constantly, until it thickens into a creamy sauce, about 3-4 minutes.

Step 6

Remove the skillet from heat and stir in the sour cream, shredded mozzarella, grated parmesan, paprika, salt, and black pepper until well combined.

Step 7

In the same skillet or a separate pan, wilt the fresh spinach over medium heat for 2-3 minutes. Drain any excess liquid from the spinach and stir it into the sauce.

Step 8

Combine the cooked egg noodles with the sauce and spinach in a large mixing bowl. Stir gently until the noodles are evenly coated.

Step 9

Pour the noodle mixture into the prepared baking dish and spread it out evenly.

Step 10

In a small bowl, mix the breadcrumbs with the olive oil. Sprinkle the breadcrumb mixture over the casserole for a crunchy topping.

Step 11

Bake the casserole in the preheated oven for 20-25 minutes, or until golden and bubbly on top.

Step 12

Allow the casserole to cool for 5-10 minutes before serving. Enjoy your Ukrainian Lokshyna and Spinach Casserole!
