Ingredients

  • 500 grams All-purpose flour
  • 250 milliliters Milk
  • 7 grams Active dry yeast
  • 10 grams Sugar
  • 7 grams Salt
  • 50 grams Unsalted butter (melted)
  • 5 pieces Garlic cloves (finely minced)
  • 3 tablespoons Sunflower oil (or any neutral oil)
  • 2 tablespoons Fresh parsley (finely chopped)

Directions

Step 1

Heat the milk until lukewarm (about 37°C/98°F). Sprinkle the yeast and sugar over the milk, stir gently, and let it sit for 10 minutes until the mixture becomes foamy.

Step 2

In a large mixing bowl, combine the flour and salt. Add the yeast mixture and melted butter. Mix until a rough dough forms.

Step 3

Knead the dough on a floured surface for 8–10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5 minutes.

Step 4

Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm spot for 1 hour or until it doubles in size.

Step 5

Punch down the dough and divide it into 12 equal pieces. Shape each piece into a smooth ball and arrange them in a greased baking dish, leaving a little space between each ball for rising.

Step 6

Cover the baking dish and allow the dough balls to rise for 30 minutes.

Step 7

Preheat your oven to 200°C (390°F). Bake the pampushky for 20–25 minutes, or until golden brown on top.

Step 8

While the pampushky are baking, make the garlic topping. In a small pan, heat the oil over low heat. Add the minced garlic and cook for 1–2 minutes until fragrant. Remove from heat and stir in the chopped parsley and a pinch of salt.

Step 9

When the pampushky are done baking, brush the garlic mixture generously over the warm rolls.

Step 10

Serve the pampushky warm as a side dish or appetizer, ideally alongside classic borscht or stewed dishes.
