In a large mixing bowl, combine the flour, sugar, salt, and instant yeast.
Heat the milk until warm to the touch and melt the butter into it. Allow the mixture to cool to lukewarm.
Add the warm milk-butter mixture, egg, and vanilla extract to the dry ingredients. Mix until a rough dough forms.
Knead the dough on a floured surface for 8-10 minutes, until it becomes smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5-6 minutes.
Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm spot for 1-1.5 hours or until doubled in size.
To prepare the filling, grind the poppy seeds in a grinder or food processor to release their oils.
In a small saucepan, heat the milk, poppy seeds, honey, and sugar over medium heat. Stir and cook until the mixture thickens, about 10 minutes. Let it cool completely.
Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
After the dough has risen, punch it down and roll it out on a floured surface into a large rectangle, approximately 40x30 cm (16x12 inches).
Spread the cooled poppy seed filling evenly over the dough, leaving a small border around the edges.
Starting from the long edge, tightly roll the dough into a log. Pinch the seam to seal and tuck the ends under.
Place the roll seam-side down on the prepared baking sheet. Cover with a towel and let it rise for 30 minutes.
Mix the egg yolk and water together to make an egg wash. Brush the top of the roll with the egg wash.
Bake the roll in the preheated oven for 25-30 minutes, or until golden brown and cooked through.
Remove the roll from the oven and allow it to cool slightly before slicing and serving.
