Ingredients

  • 1 cup wheat berries
  • 4 cups water
  • 1 cup poppy seeds
  • 1 cup walnuts (chopped)
  • 0.5 cup raisins (golden or regular)
  • 4 tablespoons honey
  • 2 cups water (for soaking poppy seeds and raisins)
  • 2 tablespoons optional sugar
  • 0.25 cup optional cream or milk

Directions

Step 1

Rinse the wheat berries under cold water until the water runs clear.

Step 2

In a medium saucepan, combine the wheat berries and 4 cups of water. Bring to a boil over medium heat, then reduce to low and simmer for 45-60 minutes, or until the wheat berries are tender but still slightly chewy. Drain and set aside to cool.

Step 3

Place the poppy seeds in a bowl and cover with 1 cup of boiling water. Let them soak for 30 minutes. Drain and grind them using a food processor or mortar and pestle until they have a paste-like consistency.

Step 4

While the poppy seeds soak, soak the raisins in 1 cup of warm water for 15-20 minutes to plump them up. Drain and set aside.

Step 5

In a large mixing bowl, combine the cooked wheat berries, ground poppy seeds, chopped walnuts, soaked raisins, and honey. Mix well to combine.

Step 6

Taste the mixture and adjust sweetness with additional honey or sugar if desired.

Step 7

For a creamier texture, stir in 1/4 cup of cream or milk (optional).

Step 8

Cover the bowl and let the kutya sit in the refrigerator for at least 1 hour before serving to allow the flavors to meld together.

Step 9

Serve cold or at room temperature as part of your Ukrainian Christmas feast. Enjoy!
