  • 200 grams Honey
  • 100 grams Unsalted butter
  • 150 grams Granulated sugar

  • 400 grams All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Ground ginger
  • 0.5 teaspoon Ground cloves
  • 0.5 teaspoon Ground nutmeg
  • 100 grams Powdered sugar
  • 1 tablespoon Lemon juice

Directions

Step 1

In a medium-sized saucepan, combine honey, unsalted butter, and granulated sugar. Heat over low heat, stirring constantly, until the butter is melted, the sugar is dissolved, and the mixture is uniform. Remove from heat and allow to cool slightly.

Step 2

Once the honey mixture has cooled to a warm temperature, whisk in the eggs one at a time until fully incorporated.

In a large mixing bowl, sift together all-purpose flour, baking soda, ground cinnamon, ground ginger, ground cloves, and ground nutmeg.

Gradually add the dry ingredients to the wet mixture, stirring with a wooden spoon or spatula until a soft dough forms. The dough should be slightly sticky but manageable. Cover the dough with plastic wrap and let it rest in the refrigerator for 1 hour.
