Ingredients

  • 1.5 cups almond flour
  • 0.5 cups whole almonds
  • 1.25 cups pitted dates
  • 0.5 cups unsweetened shredded coconut
  • 2 tablespoons honey
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons salt

Directions

Step 1

1. Line an 8x8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later.

2. In a food processor, add whole almonds and pulse a few times until roughly chopped. Set aside.

3. Add the pitted dates to the food processor and process until they form a sticky paste. If the dates are too dry, soak them in warm water for 5-10 minutes prior and drain well before processing.

4. Add almond flour, shredded coconut, honey, melted coconut oil, vanilla extract, cinnamon, and salt to the food processor with the date paste. Process until the mixture is well combined and begins to clump together.
