Ingredients

  • 12 oz udon noodles
  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp sriracha or chili garlic sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 3 cloves garlic cloves, minced
  • 2 green onions, sliced
  • 1 carrot, julienned
  • 1 red bell pepper, julienned
  • 1 tsp toasted sesame seeds
  • 2 lime wedges
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Cook the udon noodles according to the package instructions. Drain, rinse under cold water, and set aside.

Step 2

In a small bowl, whisk together soy sauce, hoisin sauce, sriracha, and sesame oil to make the sauce. Set aside.

Step 3

Pat the shrimp dry with paper towels, then season with salt and black pepper on both sides.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 1-2 minutes per side, until pink and opaque. Remove the shrimp from the pan and set aside.
