  • 1 whole red bell pepper, sliced
  • 1 cup snap peas, trimmed
  • 1 cup shiitake mushrooms, sliced
  • 2 whole scallions, thinly sliced
  • 1 tbsp sesame seeds (optional, for garnish)
  • 2 tbsp cilantro (optional, for garnish)

Directions

Step 1

Cook the udon noodles according to the package instructions. Drain, rinse with cold water to prevent sticking, and set aside.
