Ingredients

  • 1.5 cups All-purpose flour
  • 0.75 cup Ube halaya (purple yam) spread
  • 0.5 cup Unsalted butter
  • 0.75 cup Granulated sugar
  • 0.25 cup Light brown sugar
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Ube extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, sift together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream the unsalted butter, granulated sugar, and light brown sugar together until light and fluffy using an electric mixer.

Add the ube halaya, egg, vanilla extract, and ube extract to the butter-sugar mixture. Mix until well combined, with a uniform purple color.
