  • 3 tbsp honey
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 tsp salt
  • 4 tbsp, melted unsalted butter
  • 0.5 cup, freshly squeezed orange juice
  • 1 tsp vanilla extract
  • 1 cup water
  • 1 for greasing optional cooking spray or butter

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.

Step 2

Bring a large pot of salted water to a boil. Cook the egg noodles according to the package instructions until just tender. Drain and set aside.

In a medium saucepan, combine the diced sweet potatoes, sliced carrots, 1 cup of water, and a pinch of salt. Bring to a boil, then reduce heat to simmer until the vegetables are tender, about 10-12 minutes. Drain and set aside.
