Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 large ripe mangoes
  • 1 cup coconut milk
  • 2 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 0.5 teaspoon red chili flakes (optional)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 cups cooked rice or quinoa

Directions

Step 1

Peel the mangoes and remove the pits. Puree one mango in a blender until smooth, and dice the other into small cubes. Set both aside.

Step 2

In a medium bowl, whisk together the coconut milk, lime juice, soy sauce, honey, ginger, garlic, and red chili flakes (if using) to create the marinade.

Step 3

Season the chicken breasts with salt and black pepper on both sides.

Step 4

Heat the olive oil in a large skillet or frying pan over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until golden brown.

Step 5

Reduce the heat to medium and pour the marinade into the skillet. Add the mango puree, stirring to combine.

Step 6

Cover the skillet with a lid and simmer for 15-20 minutes, or until the chicken is cooked through and tender. Stir occasionally to prevent the sauce from sticking.

Step 7

Add the diced mango to the skillet and stir gently. Cook for an additional 2-3 minutes to warm the mango cubes.

Step 8

Garnish with fresh cilantro before serving.

Step 9

Serve the mango chicken over a bed of cooked rice or quinoa for a complete meal.
