Ingredients

  • 2 pieces large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.75 cups shredded cheddar cheese
  • 2 slices cooked and crumbled bacon
  • 0.25 cups sour cream
  • 2 tablespoons green onions, sliced
  • 2 tablespoons butter
  • 2 tablespoons milk
  • 0.5 cups frozen mixed vegetables
  • 0.5 cups cooked shredded chicken or turkey

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Scrub the potatoes clean and pat them dry. Pierce each potato several times with a fork.

Step 3

Rub the potatoes with 1 tablespoon of olive oil and sprinkle lightly with a pinch of salt.

Step 4

Place the potatoes directly on the oven rack and bake for 40 minutes, or until the skins are crispy and a knife easily pierces through the potatoes.

Step 5

Once the potatoes are cooked and cool enough to handle, slice them in half lengthwise. Using a spoon, carefully scoop out the inside of each potato, leaving a thin layer of potato flesh attached to the skin for structure.

Step 6

Set aside the scooped-out potato flesh in a mixing bowl and set the potato skins on a baking sheet.

Step 7

Brush the inside of each potato skin with the remaining 1 tablespoon of olive oil. Sprinkle with a pinch of salt and black pepper.

Step 8

Return the skins to the oven and bake for 5-7 minutes, until they are crisp.

Step 9

Meanwhile, mash the reserved potato flesh with butter, milk, and a pinch of salt and pepper until smooth. Fold in the mixed vegetables and the cooked shredded chicken or turkey. Transfer the mixture to a small greased baking dish.

Step 10

Sprinkle 0.25 cups of the shredded cheddar cheese over the casserole and set aside.

Step 11

Remove the crispy potato skins from the oven. Fill each skin with the remaining shredded cheddar cheese and the crumbled bacon.

Step 12

Place both the filled potato skins and the casserole in the oven. Bake for 10 minutes, or until the cheese is melted and bubbly.

Step 13

Top the potato skins with a dollop of sour cream and a sprinkle of green onions before serving.

Step 14

Serve the crispy potato skins as a shared appetizer, followed by the cozy potato casserole for a complete meal for two.
