Ingredients

  • 250 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Cayenne pepper
  • 75 grams Unsalted butter (cold, cubed)
  • 100 grams Sharp cheddar cheese (grated)
  • 40 grams Parmesan cheese (grated)
  • 150 milliliters Whole milk
  • 1 Egg (beaten, for egg wash)

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2

In a large mixing bowl, combine the flour, baking powder, salt, and cayenne pepper.

Step 3

Add the cold, cubed butter into the dry mixture. Using your fingertips or a pastry blender, rub the butter into the flour until the mixture resembles coarse breadcrumbs.

Step 4

Stir in the grated cheddar and parmesan cheeses, ensuring they are evenly distributed.

Step 5

Make a well in the center of the mixture, then pour in the milk. Gently mix until just combined, being careful not to overwork the dough.

Step 6

Turn the dough out onto a lightly floured surface and gently pat it into a disc about 2.5 cm (1 inch) thick.

Step 7

Using a 6 cm (2.5 inch) round cutter, cut out scones and place them on the prepared baking tray. Re-roll any scraps and repeat until all the dough is used.

Step 8

Brush the tops of the scones with the beaten egg to give them a golden, glossy finish.

Step 9

Bake in the preheated oven for 12-15 minutes, or until the scones are golden brown and cooked through.

Step 10

Remove from the oven and let cool slightly on a wire rack. Serve warm or at room temperature, preferably with butter or enjoy on their own!
