Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon granulated sugar
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter (cold, cubed)
  • 1 cup sharp cheddar cheese (shredded)
  • 0.5 cup parmesan cheese (grated)
  • 0.75 cup whole milk
  • 2 tablespoons heavy cream (optional, for brushing)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until well combined.

Step 3

Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, cut the butter into the flour mixture until it resembles coarse crumbs.

Step 4

Gently fold in the shredded cheddar cheese and grated parmesan cheese until evenly distributed.

Step 5

Make a well in the center of the dry ingredients and pour in the milk. Using a fork, mix the ingredients lightly until the dough just comes together. Do not overmix.

Step 6

Turn the dough out onto a lightly floured surface and gently knead it 4-5 times. Pat the dough into a rectangle about 1-inch thick.

Step 7

Use a biscuit cutter or the rim of a glass to cut out biscuits. Gently re-roll any scraps of dough and cut more biscuits until all the dough is used.

Step 8

Place the biscuits on the prepared baking sheet, making sure they are evenly spaced. For extra golden tops, brush the biscuits with heavy cream if desired.

Step 9

Bake in the preheated oven for 15-18 minutes, or until the biscuits are puffed and golden brown.

Step 10

Remove from the oven and let cool slightly before serving. Enjoy warm with butter or your favorite spread.
