  • 4 pieces large russet potatoes
  • 4 ounces cream cheese
  • 4 tablespoons unsalted butter
  • 0.25 cups whole milk
  • 1 cups shredded cheddar cheese
  • 0.25 cups sour cream
  • 1 teaspoons garlic powder
  • 0.5 teaspoons salt
  • 0.5 teaspoons ground black pepper
  • 2 tablespoons chopped fresh chives
  • 1 tablespoons olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Scrub the potatoes thoroughly under running water and dry them with a towel. Pierce each potato several times with a fork.

Step 3

Rub the olive oil evenly over the potatoes and place them on a baking sheet. Bake for 50-60 minutes, or until the skins are crisp and the potatoes are tender when pierced with a knife.

Remove the potatoes from the oven and let them cool for 10-15 minutes, or until they are cool enough to handle.

Cut each potato in half lengthwise. Using a spoon, carefully scoop out the flesh, leaving about 1/4 inch of potato on the skins to maintain their shape.
