Ingredients

  • 4 large Russet potatoes
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Butter
  • 1 cup Prepared Alfredo sauce
  • 0.5 cup Sour cream
  • 1 cup Shredded mozzarella cheese
  • 0.5 cup Grated Parmesan cheese
  • 2 tablespoons Fresh parsley
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and scrub the potatoes thoroughly, then pat them dry.

Step 3

Rub the potatoes with olive oil and sprinkle with salt. Use a fork to pierce each potato a few times to allow steam to escape during baking.

Step 4

Place the potatoes directly on the oven rack or on a baking sheet. Bake for 50–60 minutes, or until they are fork-tender.

Step 5

Once the potatoes are done, carefully remove them from the oven and allow them to cool for about 10 minutes until they are easy to handle.

Cut each potato in half lengthwise. Use a spoon to scoop out the center of each half, leaving a 1/4-inch thick shell. Place the scooped potato innards into a large mixing bowl.
