  • 4 pieces large russet potatoes
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 0.5 cup sour cream
  • 0.25 cup milk
  • 1 cup cheddar cheese, grated
  • 4 slices bacon, cooked and crumbled
  • 2 tablespoons green onions, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Wash and scrub the potatoes thoroughly. Pat them dry, then rub the potatoes with olive oil and place on a baking sheet.

Bake the potatoes in the preheated oven for about 60 minutes, or until they are fork-tender.

Remove potatoes from the oven and allow them to cool slightly, about 10 minutes. Reduce the oven temperature to 375°F (190°C).
