Ingredients

  • 1 large head Cauliflower
  • 0.5 cup Greek yogurt
  • 1 cup Cheddar cheese, shredded
  • 4 tablespoons Cream cheese, softened
  • 1 tablespoon Unsalted butter
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.75 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Green onions, thinly sliced
  • 3 strips Cooked bacon, chopped

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Break the cauliflower into small florets and steam or boil until fork-tender, about 8-10 minutes. Drain completely to remove excess moisture.

Step 3

In a large mixing bowl, combine the cooked cauliflower with Greek yogurt, cream cheese, butter, garlic powder, onion powder, salt, and black pepper. Use an immersion blender or potato masher to blend the cauliflower into a creamy, mashed consistency.

Step 4

Fold in 3/4 cup of the shredded cheddar cheese, half of the green onions, and half of the chopped bacon.

Step 5

Transfer the cauliflower mixture to a greased 8-inch baking dish or individual ramekins for personal portions.

Step 6

Top with the remaining cheddar cheese and bacon.

Step 7

Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.

Step 8

Remove from oven and garnish with the remaining green onions before serving.
