  • 4 large Russet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 cloves Garlic cloves (roasted)
  • 4 tablespoons Unsalted butter
  • 0.5 cup Sour cream
  • 0.25 cup Whole milk
  • 1.5 cups Sharp cheddar cheese (shredded)
  • 2 tablespoons Chives (chopped)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Scrub the potatoes clean and dry them thoroughly. Rub each potato with olive oil, sprinkle with salt, and place them on a baking sheet.

Step 3

Bake the potatoes for 50-60 minutes, or until the skins are crispy and the potatoes are fork-tender. Remove from the oven and let cool for about 10 minutes.

While the potatoes bake, roast the garlic. Wrap the garlic cloves in aluminum foil and roast them in the oven for 20 minutes until soft and fragrant. Let the garlic cool slightly and then mash into a paste.
