  • 1 medium Onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Olive oil
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Cumin powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Lime juice (freshly squeezed)
  • 2 tablespoons Fresh cilantro (chopped, for garnish)

Directions

Step 1

Place the TVP in a heatproof bowl and pour the hot water over it. Let it sit for 5-10 minutes to rehydrate, then fluff it with a fork and set aside.

Meanwhile, soak the cashews in hot water in a separate bowl for 10 minutes, then drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.

Add the minced garlic, smoked paprika, and cumin powder. Cook for 1 more minute, stirring constantly, until fragrant.
