Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 medium carrot, diced
  • 2 medium celery stalks, diced
  • 4 cloves garlic cloves, minced
  • 4 cups canned cannellini beans, drained and rinsed
  • 6 cups low-sodium vegetable broth
  • 1 cup crushed tomatoes
  • 4 cups kale, ribs removed and roughly chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 loaf crusty bread (optional, for serving)
  • 0.25 cup grated Parmesan cheese (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, carrots, and celery. Sauté for 6-8 minutes, stirring occasionally, until the vegetables are softened.

Step 3

Stir in the minced garlic and cook for 1 minute, or until fragrant.

Step 4

Add the cannellini beans, vegetable broth, crushed tomatoes, thyme, rosemary, bay leaf, salt, and black pepper. Stir to combine.

Step 5

Bring the soup to a boil, then reduce the heat to low and let it simmer uncovered for 20 minutes to allow the flavors to meld.

Step 6

Add the kale to the pot and simmer for an additional 5 minutes, or until the kale is tender.

Step 7

Remove and discard the bay leaf. Taste and adjust seasoning with additional salt and pepper, if necessary.

Step 8

Serve hot in bowls, optionally topped with grated Parmesan cheese and accompanied by slices of crusty bread.
