  • 3 cups cooked turkey, shredded or diced
  • 2 cups Tuscan kale (lacinato kale), stems removed and leaves chopped
  • 15 ounces canned cannellini beans, drained and rinsed
  • 14.5 ounces diced tomatoes, canned
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 0.5 teaspoons dried rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0 grated Parmesan cheese, for serving (optional)
  • 0 crusty bread, for serving (optional)

Directions

Step 1

Heat the olive oil in a large soup pot or Dutch oven over medium heat.

Step 2

Add the chopped onion, diced carrots, and diced celery to the pot. Sauté for 5-7 minutes, or until the vegetables are softened and the onion is translucent.
