Ingredients

  • 1 lb pork tenderloin
  • 2 tbsp olive oil
  • 3 cloves minced garlic

  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 2 cups cherry tomatoes
  • 2 tbsp balsamic vinegar
  • 2 tbsp fresh basil leaves
  • 1 tbsp unsalted butter

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pat the pork tenderloin dry with paper towels and set aside.

Step 3

In a small bowl, mix together the olive oil, minced garlic, dried rosemary, thyme, oregano, salt, and black pepper to create a herb rub.

Using your hands, rub the herb mixture evenly over the entire surface of the pork tenderloin.
