Ingredients

  • 4 links chicken sausage (precooked, mild or spicy)
  • 16 leaves fresh sage leaves
  • 1 large red bell pepper
  • 1 medium zucchini
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon lemon juice
  • 8 wooden or metal skewers

Directions

Step 1

If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.

Step 2

Cut the chicken sausage into 1-inch thick slices. You should get about 16 pieces.

Step 3

Core the red bell pepper and cut it into 1-inch squares. Slice the zucchini into 1/2-inch thick rounds.

Step 4

On a clean work surface, lay out the ingredients for assembly. Start building each skewer by alternating a slice of sausage, a sage leaf, a piece of red bell pepper, and a zucchini slice. Repeat the sequence until each skewer is filled, ending with a sausage slice for stability. You should have 8 skewers in total.

Step 5

In a small bowl, whisk together the olive oil, garlic powder, Italian seasoning, salt, black pepper, and lemon juice.

Step 6

Brush the prepared skewers generously with the oil mixture on all sides.

Step 7

Preheat your grill to medium-high heat (around 375°F/190°C). If using an indoor grill pan, heat it over medium-high heat until hot.

Step 8

Place the skewers on the grill, cooking for 2-3 minutes per side. Rotate the skewers occasionally for even charring and to ensure the vegetables and sausage heat through completely. Total cooking time should be approximately 10 minutes.

Step 9

Remove the skewers from the grill and transfer them to a serving platter. Allow them to rest for 2-3 minutes before serving.

Step 10

Serve hot as an appetizer or pair with a side salad for a complete meal.
