Ingredients

  • 2 pieces (boneless, skinless) Chicken breast
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried oregano
  • 1 teaspoon (or to taste) Salt
  • 0.5 teaspoon Black pepper
  • 4 pieces (sliced open) Ciabatta bread
  • 4 tablespoons Sun-dried tomato pesto
  • 2 cups Fresh spinach leaves
  • 8 slices Fresh mozzarella cheese
  • 2 tablespoons (optional) Balsamic glaze

Directions

Step 1

Preheat a grill or grill pan to medium-high heat.

Step 2

Using a meat mallet or rolling pin, lightly pound the chicken breasts to even thickness for even cooking.

Step 3

In a small bowl, whisk together olive oil, garlic powder, dried oregano, salt, and black pepper. Brush the marinade on both sides of the chicken breasts.
