Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 0.5 cup All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 cloves Garlic, minced
  • 0.5 cup Dry white wine
  • 1 cup Chicken broth
  • 3 tablespoons Lemon juice
  • 2 tablespoons Heavy cream (optional)
  • 2 tablespoons Capers, drained
  • 2 tablespoons Fresh parsley, chopped (for garnish)
  • 4 pieces Lemon slices (for garnish)

Directions

Step 1

Place each chicken breast between two sheets of plastic wrap and gently pound to an even thickness of about 1/4 inch using a meat mallet or rolling pin.

Step 2

In a shallow bowl, combine the flour, salt, and pepper. Dredge each chicken breast in the seasoned flour, shaking off any excess.

Step 3

Heat the olive oil in a large skillet over medium-high heat. Add 1 tablespoon of butter to the skillet and allow it to melt.

Step 4

Working in batches if necessary, sear the chicken breasts for 2-3 minutes on each side, or until golden brown and just cooked through. Remove the chicken from the skillet and set aside.

Step 5

Reduce the heat to medium and add the remaining butter to the skillet. Add the minced garlic and sauté for 30 seconds, or until fragrant.

Step 6

Deglaze the pan with the white wine, scraping up any browned bits from the bottom of the skillet. Allow the wine to simmer for 2 minutes to reduce slightly.

Step 7

Stir in the chicken broth and lemon juice. Simmer the sauce for 3-4 minutes until it thickens slightly. If using, whisk in the heavy cream for a richer sauce.

Step 8

Add the capers to the sauce, then return the chicken to the skillet. Spoon the sauce over the chicken and simmer for 2-3 minutes to heat through.

Step 9

Garnish the chicken with fresh parsley and lemon slices. Serve immediately with your favorite pasta, rice, or crusty bread to soak up the sauce.
