Ingredients

  • 200 grams All-purpose flour
  • 500 milliliters Milk
  • 4 large Eggs
  • 50 grams Sugar
  • 1 pinch Salt
  • 50 grams Butter
  • 400 grams Cottage cheese
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Lemon zest
  • 50 grams Powdered sugar

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, 2 eggs, sugar, a pinch of salt, and half of the milk until smooth. Gradually whisk in the remaining milk to form a thin batter.

Step 2

Melt 25 grams of butter in a non-stick skillet over medium heat. Once melted, add a small ladleful of the batter and tilt the pan to spread it evenly, creating a thin layer.

Step 3

Cook the pancake for about 1-2 minutes until the edges start to lift. Flip and cook for another 30 seconds. Remove to a plate and repeat the process with remaining batter, adding more butter to the pan as needed.

Step 4

In a separate bowl, combine cottage cheese, powdered sugar, vanilla extract, lemon zest, and remaining 2 eggs. Mix until you have a smooth, creamy filling.

Step 5

Lay a pancake flat and spread 2-3 tablespoons of the cheese mixture over one half.

Fold the pancake in half and then in half again to form a triangle. Repeat with the remaining pancakes and filling.

Step 7

Preheat oven to 180°C (350°F). Arrange filled pancakes in a baking dish and dot with the remaining butter.

Bake for 10-15 minutes until heated through. Serve warm, optionally dusted with additional powdered sugar.
