Ingredients

  • 100 g hazelnuts
  • 2 slices stale bread (crusts removed)
  • 2 cloves garlic
  • 2 tbsp fresh lemon juice
  • 60 ml olive oil
  • 100 g plain Greek yogurt
  • 60 ml water
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 1 tsp paprika
  • 1 tbsp fresh parsley (for garnish)

Directions

Step 1

Preheat your oven to 180°C (350°F).

Spread the hazelnuts on a baking tray and roast them for about 8-10 minutes, or until the skins darken and the nuts have a warm, toasted aroma.

Remove the hazelnuts from the oven and transfer them to a clean kitchen towel. Rub the nuts gently with the towel to remove most of the skins. Set them aside to cool.

Soak the stale bread slices in a bowl of water for 1-2 minutes, then squeeze out the excess water and crumble the bread into a mixing bowl.
