Ingredients

  • 500 grams green beans
  • 60 ml olive oil
  • 1 piece large onion
  • 3 pieces garlic cloves
  • 3 pieces ripe tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 250 ml water
  • 1 tablespoon lemon juice
  • 10 grams fresh parsley (optional)

Directions

Step 1

Wash and trim the ends of the green beans. Cut them into 4-5 cm (1.5-2 inch) pieces and set aside.

Step 2

Peel and finely chop the onion. Mince the garlic cloves. Grate or finely chop the tomatoes.

Step 3

In a large pot or skillet, heat the olive oil over medium heat. Add the chopped onions and sauté for 3-4 minutes, or until softened and translucent.

Step 4

Add the minced garlic and cook for another minute until fragrant.

Step 5

Stir in the tomato paste and cook for 1-2 minutes to enhance its flavor.

Add the grated tomatoes, sugar, salt, and black pepper to the pot. Cook for 5-6 minutes, stirring occasionally, until the tomatoes break down and form a thick sauce.
